Eatdrinksleep is the company that Charles Inkin set up in 2000 to bring to life the newly refurbished Felin Fach Griffin.

The name sums up what we're about.  Our modern version of a traditional inn feeds and waters the traveller before affording them the best night’s sleep they remember.

Having done our best to achieve this at The Griffin and The Gurnard's Head in Cornwall, we were blindingly lucky to be asked by the people at Tresco to help them bring The Old Coastguard back to life.   

But we never forget that the stars of our show are the buildings that we love and work in and the landscapes that surround them.

Maybe that is the case more here in Mousehole than anywhere else where The Coastguard has a view that never ceases to make us gasp.



Charles Inkin

A product of the world-famous Ballymaloe under Darina Allen and, after working at the Michelin starred Shanks in Belfast, set up The Felin Fach Griffin.

He fell in love with West Cornwall in 1998 and felt he'd return one day. He did and has now been charming visitors to the area in his peculiarly bewhiskered way for 11 years.


The Team

General Manager, Louis Vanhinsbergh, runs our team with the panache you'd expect of someone with such a glamorous surname. . 

Led by Lauren Howard, The Roundhouse is where we welcome guests arriving with baggage from points east.  It remains a cornerstone for how we look after our guests.

Finally, our Floor team keeps our keel even at all times.  It's led by our Assistant GM, Rohit Patkar, supported by Wine Manager, Tim Griffiths, and Bar Manager, Guy Lonsdale.

Matthew Smith

Matt stepped up to be Head Chef at The Coastguard from his role as top man across the way at The Gurnard's Head where he had been since March 2014.

He has been here before though, as Sous Chef for two years under his predecessor Tom Symons.  Matt is a father of two and increasingly a runner of very long races.           


Edmund Inkin

Edmund was brought up in Monmouthshire surrounded by a dairy herd and an immaculate kitchen garden.

A career in London during his twenties took precedence over his love for food and wine but, on receipt of a P45 from a London bank, he joined forces with Charles. He is rightly rarely permitted to talk to guests.
